Yummy Buffalo Chicken Meat Loaf Recipe!

Over at the facebook page we were talking about dinner and what we had. Here is my super yummy and healthy Buffalo Chicken {Blue Cheese} Meat Loaf. It calls for Blue Cheese, which I did not add. We used a little bit of a Yogurt Ranch to dip with. The Buffalo Sauce I used was not “spicy” enough for my boys to be bothered by it, or for me to enjoy it, so I added more to the top of my portion. I liked that though, because after I added more, it was perfect, so a nice balance, the kind I got was Red Hot Wing Sauce in Spicy BBQ. One last hint: I also made some of the mixture in Muffin Tins, so that I could just pop them out and give them to my boys.

Buffalo Chicken Meat Loaf Recipe from the Biggest Loser Family Cookbook {only $12.07 right now on Amazon!}

  • 2/3 Cup Old-fashioned Oats
  • 1/2 Cup Fat-Free Milk
  • 2 1/2 Tablespoons Buffalo Wing Sauce {I used about 3} would use more if my sons weren’t eating any
  • 1 lb. Extra Lean Ground Chicken Breast
  • 1/2 Cup Finely chopped Celery
  • 1/4 Cup Shredded Carrot
  • 1/4 Cup Chopped Sweet Onion
  • 2 Large Egg Whites. lightly beaten
  • 1/4 teaspoon salt {I omitted since my buffalo sauce had plenty of sodium}
  • 2 ounces or 1/2 cup crumbled reduce-fat blue cheese {again I omitted}
  1. Preheat oven to 350 F. Lightly mist a 9″ x 5″ x 3″ non stick loaf pan with spray {or muffin tin}
  2. combine the oats and milk in medium mixing bowl. Stir and let stand for 3 minutes so oats begin to soften.
  3. stir in wing sauce and mix well. add the chicken, celery, carrot, onion, egg whites, and salt. Mix all ingredients Well.
  4. Add blue cheese and combine mix.
  5. Transfer the mixture to pan and spread so top is flat. Bake for 35-40 minutes or until chicken is completely cooked through
  6. Cut into 8 slices. Serves 4. Per serving: Calories: 263 Protein: 35 g Carbs: 14g Fat: 6 g {2 saturated}, Cholesterol 74 mg, Fiber: 2g
