Perfect Holiday Recipe: Baked Corn!

Seriously, this is the PERFECT holiday recipe! Easy and YummY! I don’t know how we had holiday meals without it!! Have you ever tried Baked Corn?! Its similar to corn bread but more corny 😀

Super simple to throw together but I am sure you family will love it!

Here’s what you need to make it:

Just add 12 ounces of corn bread mix {Jiffy boxes are 8.5 ounces FYI} with one can of whole corn kernels, and one can of creamed style corn, 1/2 cup sour cream, 2 sticks or 1 cup melted butter, 2 eggs and 1/2 cup sugar together

Mix, and pour into greased 9×13 baking dish. Preferable  Vintage Pyrex 😉 {Just kidding} Bake at 350° for 40 minutes

Menu Planning Monday Week of 10/21/13

I know that it helps me when I have a menu planned out for suppers for the week, so I am going to try to bring you my plan each Monday, so you can get ideas and a reminder to make your plan too!


These are the meals we will be having this week, but not in order of when we will have them, because it never seems I cook the meal on the day I post here! We also usually have a “Leftover Free for All” night and order in take out or go out to eat once a week.

Veggie Pizza Appetizer Recipe

This is a very yummy way to eat some veggies! 😉 And pretty easy too! Great for a lunch or for a party!

Veggie Pizza Appetizer Recipe

  • 2 rolls of crescent rolls
  • 1 packaged of cream cheese, soften
  • chopped veggies of your choice: broccoli, carrots, cauliflower, cucumber, peppers, etc.
  • 1 package ranch dressing dry mix
  1. Take crescent rolls out of package, but do NOT separate them, unroll in one piece. {They also sell un-seemed rolls, if you can find them}
  2. Cook crescent rolls according to package directions
  3. Let cool
  4. Mix ranch dry mix with cream cheese.
  5. Spread cream cheese mix onto cooled crescent rolls
  6. top with chopped veggies
  7. Serve & Enjoy!

Homemade Pumpkin Lattes Made With A Mason Jar!

Oh how useful are Mason Jars??!? I just love them! ♥ And here is one more reason to love em, they can make Pumpkin Lattes at home! How cool is that?!

I recently had some girlfriends over to let our kiddos play and catch up with each other since we haven’t been able to connect in awhile. It was the beginning of fall so we were able to sit outside while the kids played and make some moments of connection!  I wanted to make the get together special so I made some yummy pumpkin bread and wanted to make something with the new Coffeemate Pumpkin Spice creamer.

I read somewhere that you could make Homemade Lattes with a Mason Jar! And it seemed so easy it was perfect for our get together!

It was really fun to make the lattes with the girls, we had a good time shaking up the jar and garnishing our coffee treats. After we were done making the lattes we enjoyed some moments of connection outside while we chatted about our kiddos and life as stay at home moms.

How to make:

Add about 1 cup of Coffeemate Pumpkin Spice to mason jar.

Microwave the jar {without the lid} for about 2 minutes

Carefully take out with pot holders {It will be HOT!} and screw metal lid onto jar.

Pour into your cup of coffee!

Top with any desired garnish like whipped cream and ground nutmeg!

Jalapeno Popper Dip Recipe Using Philadelphia Cream Cheese

Do you like Jalapeno Poppers?! How about a dip that is not as much work as breading and frying actual jalapenos…. less work = 🙂 in my book! And of course I had to use Philadelphia Cream Cheese because other brands just don’t compare in the taste and quality that Philadelphia cream cheese does! Plus you can find a Philadelphia cream cheese coupon that is good for $.50 off a 2 pack of Philadelphia Cream Cheese! Always better when you have a coupon too! 😉

I had some friends over to watch Big Brother and made this dip for us to snack on. It was a big hit especially for the pregnant friend 😉

Jalapeno Popper Dip recipe

Ingredients Needed:

Dip Mixture:

  • 2 (8 ounce) packages cream cheese, room temp {Find a coupon below for $.50/2!}
  • 1 cup mayonnaise
  • 1 cup shredded Mexican blend cheese (half Jack, half cheddar cheese)
  • 1/2 cup Parmesan cheese
  • 1 cup OR 8 oz of Jalapeno peppers


  • 1 cup Panko bread crumbs
  • 1/2 cup Parmesan cheese
  • 1/2 stick butter, melted


In a food processor, add the first 6 ingredients and process until smooth. You do not need to drain the “juice” of the peppers. Spread the dip into a greased 2-quart casserole.
In a bowl, mix breadcrumbs, Parmesan cheese, and melted butter; mix well. Sprinkle crumb mixture evenly over the dip
Bake in a preheated 375 degree F. oven for about 20 minutes.
You want the top to get browned and the dip to be heated through and bubble gently on the edges.

Peanut Butter, Cinnamon, Banana English Muffin

Who doesn’t love a quick, easy nutritious packed breakfast or snack that is also kiddo approved? Since school is approaching  us quickly we are trying to find some healthy alternatives besides the traditional bowl of cereal.

We took whole wheat english muffins and toasted them. Added all natural peanut butter. Sliced up bananas and arranged on top of the peanut butter. We finished off by sprinkling some cinnamon and drizzling some honey on top.

*My kiddos enjoyed having all the ingredients and making them (besides the toasting part) all by themselves!

My oldest son just turned 8 earlier in the month and I thought this would be a fun treat for him to wake up to! Birthday Cake Pancakes! He loved them and made his day feel special! It was just as easy as regular pancakes so definitely worth it

Birthday Cake Pancakes Recipe

FUN Birthday treat or any special breakfast!
  • Pancakes
  • 1 cup Original Bisquick® mix
  • 1 cup Betty Crocker® SuperMoist® yellow cake mix
  • 3 tablespoons candy sprinkles
  • 1 cup milk
  • 1 teaspoon vanilla
  • 2 eggs
  • Glaze and Garnish
  • 2½ cups powdered sugar
  • 3 tablespoons plus 2 teaspoons milk
  • 1teaspoon vanilla
  • Additional candy sprinkles
  1. Heat griddle or skillet over medium-high heat or electric griddle to 375°F
  2. Grease with cooking spray
  3. Stir together pancake ingredients until blended.
  4. Pour by slightly less than ¼ cupfuls onto hot griddle.
  5. Cook until bubbles form. Turn; cook until pancakes are golden brown.
  6. In small bowl, beat powdered sugar, milk and ½ teaspoon vanilla with whisk until smooth.
  7. To serve stack pancakes on top of another and top with glaze and sprinkles

Chicken, Spinach, & Artichoke Grilled Pizza Recipe

Easy Grilled Pizza made with Pillsbury Pizza Crust a few toppings and a backyard grill! Perfect for summer nights when you don't want to heat the house with the oven!
  • ½ box (10 oz.) frozen chopped spinach, thawed and drained
  • 4 oz. cream cheese, softened
  • 2 tablespoons mayonnaise
  • ⅓ cup chopped artichokes
  • 1 garlic clove, minced
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup Parmesan cheese, shredded, divided
  • ½ cup mozzarella cheese, shredded
  • 1 cup cooked chicken
  • 1 package flatbread
  1. Heat Grill, Brush Olive Oil onto grill. Place Pizza Crust onto grill and cook until bottom is nice and light brown
  2. Turn over and cook other side for a minute or two
  3. In a medium bowl, mix together spinach, cream cheese, mayonnaise, garlic, salt, pepper and half of the Parmesan cheese.
  4. Place Chicken next
  5. Top with remaining Parmesan and mozzarella cheese.
  6. Place back onto grill and cook until cheese is melted
