Mama Cooks: Stuffed Pepper Soup

I posted yesterday my meal plan, I ended up making this recipe for the Sausage something: Stuffed Pepper Soup. It was a big hit and everyone in my family loved it, even the kiddos! My oldest son had three bowls!

Here is the recipe:

Stuffed Pepper Soup


  • 3 cups cooked brown rice
  • 1 lb 95% lean ground beef or Italian sausage {which is what I used}
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red bell pepper or a cup of just green peppers is fine too
  • 1 cup finely diced onion
  • 3 cloves garlic, chopped
  • 1 jar of pasta sauce
  • 2 cups reduced sodium, fat-free chicken broth
  • salt and fresh pepper to taste


In a large pot or dutch oven, brown ground meat on high heat and season with salt.Drain fat if any, reduce heat to medium-low, then add peppers, onions and garlic.Cook about 5 minutes on low heat.

Add sauce, chicken broth, and season with salt and pepper to taste. Cover and simmer on low heat for 30 minutes. Add in rice.

  1. This sounds really good, but do you use pasta sauce or tomato sauce? The directions say tomato sauce but ingredients say pasta sauce.
