Mama Cooks: Chicken Carbonara Lasagna

 


Here is a new series on Good Deal Mama, called Mama Cooks, because I hate cooking the same things over and over again and love experimenting with different recipes. So when the mood hits you’ll see a new recipe from Mama Cooks :) Let me know if you like this!

I looooove Chicken Carbonara but it is soo time consuming! I made up this recipe for the taste of chicken carbonara in a lasagna!  I am not a fan of peas so I used spinach but my sons LOVE peas and would be happy with them instead, so use what you likeI also don’t like ricotta cheese, and never use it in a lasagna.

**As always, I make recipes by what I think will work best, measurements vary based on what you like! 

Chicken Carbonara Lasagna

Ingredients

  • 1 box of no boil lasagna noodles or 1 pkg. prepared lasagna noodles
  • 2-3 chicken breast, cooked and shredded {consider cooking in bacon pan, once drippings are removed}
  • 1/2 pound-1 pound bacon, cooked and crumbled
  • 1 cup shredded mozzarella
  • 1 cup shredded cheddar
  • 1 pkg. frozen spinach or you could use peas {which is what carbonara actually calls for, I just prefer spinach 😉 }
  • 1-2 jars of Alfredo Sauce of your choice, or prepare your own {recipe below}
  • some garlic powder to taste
  • optional: seasoned bread crumbs and parmesan cheese

 

Directions

  1. Pre-heat oven to 375°
  2. Cook bacon, set aside, and cook chicken breast inside “greased” pan for good bacon flavor :) , use garlic powder as needed
  3. Grease 9×13 pan
  4. Cover bottom with some Alfredo sauce
  5. Layer noodles, chicken, bacon, spinach, and sauce until ingredients are gone
  6. Top with seasoned bread crumbs and parmesan cheese {optional}
  7. Cook covered for 25 minutes
  8. Remove foil and cook for additional 15 minutes

Homemade Alfredo Sauce Recipe

Ingredients

  • 1/4 cup butter
  • 1 cup heavy cream
  • 1 clove garlic, crushed
  • 1 1/2 cups freshly grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

Directions

  1. Melt butter in a medium saucepan over medium low heat. Add cream and simmer for 5 minutes, then add garlic and cheese and whisk quickly, heating through. Stir in parsley and serve.
