Mama Cooks: Crock Pot Chicken & Black Beans

So I posted on Monday that I would be making this recipe, Crock Pot Chicken with Black Beans . Well I did, but I didn’t like a few things about it and tweaked it if you will so I thought I would write it up how I made it!This is a super easy and quick meal over rice or in tortillas. It would also make a great “dip” for a party!

Crock Pot Chicken with Black Beans


  • I used 3 Boneless Chicken Breast thawed
  • 1 can black beans, rinsed
  • 1 can of corn, drained
  • 1 16 oz. jar of salsa {this is what gives it a ton of flavor, so make sure to pick a good one 😉 }
  • 1 package of cream creese


    1. Put chicken into crock pot
    2. Add salsa, corn, and black beans
    3. I cooked this for about 5 hours on low {but my slow cooker gets really hot, so this may vary}
    4. Shred chicken or leave whole
    5. Add cream cheese to top until melted {about a half an hour}
    6. Add to taste: onion powder, garlic salt, and/or Adobo plus a little chili powder
The cooking time, amount of chicken and added spices is the difference between mine and original recipe in case you were wondering. I don’t know if I used “crappy” salsa or if it truly needed additional spices. I added onion powder and garlic salt when I first added ingredients and it still was missing something after it was done cooking. I *think* that the Adobo really helps.
