So my husband and I wanted to try out the New Taco Bell Cantina Bowl and we thought they were pretty good for a fast food place, but I knew I could make them and probably healthier as well. Well I tested out my recipe tonight and my husband and I agree that my recipe is better then Taco Bell’s!

Taco Bell’s Cantina Bowl Copycat recipe

A copycat recipe for Taco Bell’s Cantina Bowls, with my spin on it :)
Ingredients
  • 2 Chicken Breast
  • 2 cups cooked White Rice
  • Black Bean, Corn, and Lime Salsa made from recipe link here: Black Bean, Corn, and Lime Salsa
  • Guacamole
  • Lettuce
  • Lime Ranch dressing**
Instructions
  1. Make Black Bean, Corn, and Lime Salsa {recipe here}
  2. Start White Rice on stove per instructions on package, add a splash of lime
  3. Grill Chicken Breast with Adobo and Cumin seasoning, and adding lime juice while cooking. Once cooked slice chicken breast
  4. Once Rice in down cooking remove from heat
  5. **To Make the Lime Ranch Dressing – just mix lime juice, ranch dressing, pinch of cumin, and small amount of chopped tomatoes/onions/cilantro out of Salsa
  6. Place Lettuce into bowl, Add scoop of rice, add sliced chicken breast, add spoonfuls of salsa, add dollop of guacamole, and a drizzle of lime ranch dressing
  7. ENJOY!

  3. This is delicious! I had the same thought that I could improve upon TB’s Cantina Bowl, and this recipe accomplishes exactly that. The only change I made is that I substituted farro for the rice. Otherwise, I followed the recipe exactly and it was very well-received at dinner tonight. Thank you for a great recipe!
