Bite Size Cheesecake Stuffed Strawberries

So tonight I wanted to make a simple dessert for my guys but I didn’t have any whipped cream on hand. I stumbled across this recipe by The Sweets Life and new I had to make these!

**My pictures stink, and they don’t look very pretty, but these things are GOOD! Believe me! :)**

Bite Size Cheesecake Stuffed Strawberries

Ingredients
  • 1 lb large strawberries
  • 8 oz. cream cheese, softened
  • 3-4 tbsp powdered sugar (4 tbsp for a sweeter filling)
  • 1 tsp vanilla extract
  • graham cracker crumbs
Instructions
  1. Rinse strawberries and cut around the top of the strawberry.
  2. Either —Remove the top and clean out with a paring knife, if necessary (some may already be hollow inside).
  3. OR Cut crosswise along point of strawberry {Which I did}
  4. Prep all strawberries and set aside.
  5. In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until creamy. Add cream cheese mix to a piping bag or ziploc with the corner snipped off.
  6. Fill strawberries with cheesecake mixture.
  7. Once strawberries are filled, dip the top in graham cracker crumbs.
  8. If not serving immediately, refrigerate until serving.

I am planning on making these for a party but I may have to try dipping them in white chocolate first rolling them in the graham cracker crumbs then filling! How good would that be?!
