Peanut Butter, Cinnamon, Banana English Muffin

Who doesn’t love a quick, easy nutritious packed breakfast or snack that is also kiddo approved? Since school is approaching  us quickly we are trying to find some healthy alternatives besides the traditional bowl of cereal.

We took whole wheat english muffins and toasted them. Added all natural peanut butter. Sliced up bananas and arranged on top of the peanut butter. We finished off by sprinkling some cinnamon and drizzling some honey on top.

*My kiddos enjoyed having all the ingredients and making them (besides the toasting part) all by themselves!

Easy chicken salad recipe that is sure to please the entire family. Quick, fresh, light and scrumptious!
Ingredients
  • 2 cups cooked shredded chicken
  • 1 cup dried cranberries
  • ½ cup chopped walnuts (or nuts of your choice)
  • ½-1 cup whipped dressing
Instructions
  1. place chicken, cranberries, and nuts in bowl- stir
  2. add whipped dressing until ingredients stick together
  3. serve plain, with crackers or on bread

Playful Painting

Kids LOVE to paint and get messy!  This activity is perfect! Let the kiddos get messy and have a good time- by dropping finger paint in the bottom of an empty tub at different areas. Then put the kiddo in and let them go to town. We have gotten very creative- practiced letters, numbers, words, as well as discovered what colors you can make. Best part is it comes right off with water and sponge.

Cucumber Chicken/Tuna Salad Bowls

Ingredients
  • 2-3 Cucumbers
  • Shredded Carrots
  • Tuna Salad
  • Drain 2 cans of tuna. Place in bowl. Add whipped dressing- enough to make creamy. Chopped up celery or relish. Add any seasonings (lemon-pepper, crushed red pepper, garlic, minced onion…etc.) Give it all a good stir.
  • Chicken Salad
  • Same as the tuna salad listed above--just use shredded chicken instead!
Instructions
  1. Cut the cucumbers in 1-1 ½ inch chunks.
  2. Then take a spoon and hollow out a hole (leaving the bottom in tact- remember you’re creating a bowl effect)
  3. Fill the cucumbers with your salad of choice.
  4. After they are filled take the shredded carrots and stick them in the salad- to garnish and make fun.

Zucchini Lasagna

I love using our fresh local vegetables and had a lot of zucchinis on hand. My family was hungry for lasagna BUT in the summertime who likes having that heavy stomach that pasta leaves? This recipe by far hits the lasagna craving and leaves you with energy to enjoy all those summer activities!

Zucchini Lasagna

Ingredients
  • 5-8 Zucchinis (depending on size)
  • 3lbs of ground turkey
  • 1 large jar of spaghetti sauce (choose your favorite flavor)
  • 1 small container of ricotta cheese
  • 2 eggs
  • 1 bag of mozzarella cheese
  • 2 cups of parmesan cheese
  • Oregano
  • Basil
  • Italian Seasoning
  • Garlic
  • Crushed Red Peppers
Instructions
  1. Preheat oven to 350degrees
  2. Brown the turkey and drain the grease
  3. Add the jar of spaghetti sauce and simmer
  4. In a medium size bowl mix the tub of ricotta cheese, 2 eggs, 1 cup of the Parmesan cheese, 2-3 handfuls of the mozzarella cheese, and the spices to your liking. (I typically just give a few shakes of each)
  5. Cut zucchini length wise- in thin slices
  6. Place a few spoonfuls of the meat sauce in bottom of 9x13 pan- enough to cover the bottom
  7. Place the zucchini slices over the meat- to cover the meat
  8. Put the ricotta mixture over the zucchini- thinly
  9. Repeat these steps, until you have just meat mixture left on top.
  10. Sprinkle with the rest of the mozzarella and Parmesan
  11. Cover with aluminum foil, and bake at 350 for 45-60minutes
  12. Remove foil and bake for another 10-15minutes

I was hungry for a very light, refreshing salad that was healthy and quick to put together. Also was looking for an alternative to the traditional tuna salad that is made with mayo. We used ingredients that were on hand and in season to make this yummy Greek avocado tuna salad. Hope you enjoy this fun simple recipe for summer!

Nice, light refreshing salad for summer!
Ingredients
  • 2 Cans of Tuna
  • 2 Zucchinis
  • 2-3 Avocados
  • Lemon- Pepper seasoning
  • Greek Salad Dressing
Instructions
  1. Drain the two cans of tuna. Empty cans in to medium sized bowl.
  2. Peel and pit the avocados. Put in bowl.
  3. Cut small chunks of the zucchinis and place in bowl. Stir.
  4. Add Greek dressing- amount depends on your desire. I personally add about ¼ - ½ of the dressing bottle.
  5. Sprinkle some lemon-pepper seasoning in the bowl and give it all a good stir.
  6. Serve plain or with some crackers.
